Grilling With Indirect Heat
Grilling with indirect heat is the choice method for foods that need to be slow cooked. It is like slow roasting something in the oven, but with better flavor and grilled texture. With indirect heat, your grill ends up working like a convection oven by reflecting the heat of the top ands sides of the grill. This causes a circulating heat inside the grill that slowly cooks the food evenly on all sides, with no need to turn the food.
Setting up either your gas or charcoal grill to cook with indirect heat is easy and is the only way to successfully cook a beer can chicken.
